This unit aims to equip you with the ability to apply the principles and theories of chemistry to describe and evaluate the physicochemical properties and functionalities of oil and fats, and the chemical reactions involved. The unit also provides you with hands-on laboratory experience in lipid analysis using the standard methods practised by the industry.
