Overview
This new unit devotes to the processes involved in the production of edible oils from natural sources. It provides an overview of the unit operations involved in the extraction, refining and processing of oils and fats of appropriate quality in terms of their physical, chemical, and nutritional properties.

When you finish this unit, you should be able to:

Analyse and discuss the basic unit operations involved in the extraction, refining and processing of oils and fats.

Formulate a process flow diagram for a selected process in oils and fats production.

Appraise the latest technological developments for improving the yield and sustainability of oils and fats production.

Evaluate the physical, chemical, and nutritional properties of extracted and refined oil.
