Requisites

Overview

This unit will extend your knowledge of the food systems that exist within organisations and on a local and global scale. It will develop your skills in monitoring food environments and interpreting and applying the technical, organisational management, business and policy elements that support food systems to function and ensure that the eating experiences is not only safe, but nutritious and enjoyable. Teaching and learning will occur in a range of real and simulated commercial (e.g. restaurant, food production) and institutional (e.g. aged care, childcare, school, hospital), eating/foodservice settings and include an introductory placement that will allow you to develop understanding of the roles of the dietitian within the food system within community and institutional settings. This unit will prepare you to perform a range of tasks that are critical for employment and entrepreneurship in a range of work contexts.

Learning outcomes

When you finish this unit, you should be able to:

    Evaluate the factors that make and influence food systems and food supply chains, from local to global levels, and within organisations and settings where people eat meals.

    Demonstrate technical and culinary skills and apply food composition knowledge to support dietetic practice in a diverse range of food service settings and food systems.

    Evaluate elements of food systems across a range of different contexts, using relevant standards, policies and tools.

  4. 4

    Appraise the system-level principles of organisational management, human resources, financial management, change management, quality improvement, sustainability and policy in activities that support nutrition and dietetics practice.

  5. 5

    Explore new and emerging areas of nutrition and dietetics practice, entrepreneurial leadership, marketing, management and business skills.

  6. 6

    Utilise a variety of communication strategies to engage different audiences across a range of settings.

  7. 7

    Evaluate the roles that food, health and education systems have in improving the health of Aboriginal and Torres Strait Islanders.

There is an average of 12 hours per week allocated including contact and private study hours during the theory component. This includes pre and post class work, 6 hours of workshops per week plus 2 x 3 hour Food Science and Nutrition Practical Activities per semester. This unit provides theory that will be built on and assessed during integrated workplace-based placement in NUT5001, NUT5002 and NUT5005.
